Snake River Farms
In 1988, Agri Beef, adopted the first Wagyu cattle program in the United States that later became known as Snake River Farms. Agri Beef has been setting the bar for the cattle industry since their inception and they have the awards to prove it. In 1998 they were recognized as the Cattle Business of the Century, in 2012 founder Robert Rebholtz Sr was inducted into the National Cattle Feeders Hall of Fame and in 2018 received Meatingplace Magazines 2018 Richard L Knowlton Innovation Award.
Snake River Farms and Agri Beef, control the entire supply chain for the products they provide; from the Ranches where the cattle is raised to the processing facilities. This provides us with the ability to get first hand information about the ingredients we are utilizing to prepare our guest’s meals.
Our Philosophy
Chef`s Words
Whenever possible we utilize locally sourced ingredients most of which come from within 60 miles of our restaurant; but for a few vendors we have to go outside of the local area to ensure the quality and availability of our ingredients. We don’t make this choice easily and when we do we ensure the vendor is the best of the best.
After reviewing and tasting tons of local Vermont wagyu, and meeting with potential vendors about product availability we made the hard choice to source our meat Wagyu from outside of the area. There was a huge number of options to select from in the midwest for American Wagyu but Snake River Farms stood out from the crowd.
